Tie Guan Yin 50g

Also known as the Iron Goddess Oolong, Tie Guan Yin is an ancient, extremely high quality variety of Chinese oolong tea, associated with traditional legends and originating in Anxi, in the beautiful Fujian province. Its production is regimented, involving ten steps from plucking the leaves to finally roasting them. Due to the complexity of this process, producing this tea is a difficult, intensive task that requires expertise. Different regions in Anxi will produce varieties of Tie Guan Yin with varying accents and aromas.

A heavy bodied tea, it has refreshing notes of camphor and a strong floral, orchid-like aroma. It is perhaps due to these notes of camphor and its high anti-oxydant content that this tea has a reputation as increasing energy and motivation.  Its slightly sweet, honeyed taste has notes of dark caramel, and its leaves famously have a delightful scent.

Use: 5-6 grams or 1-2 tsp. of tea

Water amount: 1 gram of tea / 30ml of water or 1 tsp. of tea / 3 oz. of water

Temperature: 90-95 °C or 194-203 °F

Brew: 6-7 times

First brew: 5-10 seconds to preheat the tealeaves and the liquor is rarely drunk.

Second brew: 30-40 seconds

Third brew: 60-70 seconds

Subsequent brews: taking longer for more brews and ends up by taking about 4-5 minutes for the 9th infusion.
