An Ji White Tea

Although white is in its name, An Ji is actually a highly refined type of green tea: it was named for the particular type of tea tree from which it is picked, which is peculiar because it turns white during springtime. Its slender leaves will produce a beautiful, lingering aroma when steeped, and its taste is woodsy, subtle and a bit sweet.

This tea cultivar was discovered in 1982, is not as widely planted as other teas and has a short harvesting period; it is a comparatively rare tea.


It is called "white" tea although it is a green tea.  The long, narrow leaves are yellow in colour and have a recognisable fold along the length of the leaf.

Research found that the tea plant has low chlorophyll and poly-phenol content (which explains the whitish-green tea leaves) but is very rich in amino acids. It has almost twice the amount comparing to other green teas. Amino acid helps suppress cortisol and reduces stress.

2-3 grams for 100 ml of water at 80°C; infusing 2-3 minutes and renewal for 3 infusions.
